About Harbor Lane Bakery
The bakery was opened in 2014 by Mara Quill and Tobin Ashe, who met while working night shifts in a hotel kitchen. They bought a second-hand deck oven, rented the old chandler's shop at 12 Harbor Lane, and sold out of bread on the first morning.
Today nine people work here: five bakers, two pastry cooks and two in the shop. Mara still shapes the sourdough herself, and Tobin runs the cake orders.
How we bake
Our sourdough rises for twenty hours. We use no improvers and no premixes. Butter comes from a dairy in the next town, and fruit from growers we know by name.
Our promise
If a loaf or a cake is not right, bring it back or tell us the same day and we replace it or refund it. No forms to fill in.
